Students from Gastronomy and Culinary Arts conducted an educational visit to the ZERNO restaurant as part of their practical training. ZERNO is rightly considered one of the leading premium-class establishments in the capital, serving as a model of modern continental and local gastronomy.
This excursion provided future specialists in culinary arts and restaurant management with a unique opportunity to learn about the operations of an establishment that prioritizes 100% natural ingredients, sustainability, and seasonality.
ZERNO, which houses a restaurant, a coffee shop, and a store with its own cheesemaking facility, bakery oven, and smokehouse, demonstrated a comprehensive approach to the restaurant business to the students:
Concept and Brand: Students examined how ZERNO managed to create a strong brand based on the "farm-to-table" philosophy and the use of the highest quality local products.
Premium Kitchen Organization: Special attention was given to the organization of the kitchen, adherence to strict quality and hygiene standards, and the use of modern equipment, including Spanish Josper ovens.
The Art of Service: Future restaurateurs observed premium-class customer service standards, where attention to guests, a personalized approach, and deep menu knowledge are key elements.
During the visit, the students had the opportunity to communicate with managers and chefs who shared their experience in creating exquisite dishes and managing a high-end establishment.
